I know what you're thinking - Irish Pizza? Seriously? You betcha! It's actually pretty darned good - like an open faced Reuben sandwich! If you're not a lover of sauerkraut you can leave it off and this pizza will taste more like a Corned Beef Sandwich.
I use a pre-made Foccacia dough from Trader Joe's for my crust but you can make your own or use a Boboli or another brand of pre-cooked crust to make this quicker. It's a wonderful way to use your St. Patrick's Day dinner leftovers too and it might be the only way to get your kids to enjoy corned beef & "cabbage"!
It's sort of like a marriage between an Italian and an Irishman - surprisingly successful, spicy and it bites back! Your St. Patrick's Day Shindig guests will love the idea and the recipe!
