HOT LITTLE TOMATOES - Sexy Food in One Bite

This is a recipe that is a bite size version of a side dish my Mom used to make when I was a kid. She would take her home grown tomatoes, slice them in half, spread Miracle Whip on them, sprinkle them with Parmesan Cheese and then stick them under the broiler. I hated tomatoes when I was a kid but I liked these - probably because of the sweetness of the Miracle Whip!

I got a craving for them a few days ago but didn't have any regular tomatoes on hand but I did have cherry tomatoes so I though, "Hey, why not turn this into an appetizer recipe for my blog??"

These Little Hot Tomatoes go great served with any of my Tomato Martinis and you can also serve them with these Cheese Shortbread Bites I found at the Land O'Lakes recipe site.

Bacon, Lettuce and Tomato in a Potato Cup? Yup!

These B.L.T. & P. appetizers are great little cold canapes that I've done a lot lately. As usual I tweaked the recipe to fit my own tastes - and to fit what was in my fridge at the time! It's really a simple variation on the popular combination of a bacon, lettuce and tomato sandwich (BLT) but instead of putting it between two slices of bread with mayo you spoon the mixture into a little potato cup.

I've also used bacon bits when I didn't have actual bacon and I've used cherry tomatoes instead of the potato and left the tomato out of the filling - which makes it a BLTminusP bite, lol. You can do a ton of variations on this so have some fun with it and make it your own.

This goes great with my B.L.T. Martini and my newest vegetable martini - The Garden In A Glass Martini.

ITALIAN SAUSAGE MEAT PIES - Italy meets Mexico and Asia!

By now you will have figured out that I love Italian Sausage, lol. If you type "Italian Sausage" into my search bar over on the right side bar here at least four recipes will come up. (And I haven't posted half of my recipes using this ingredient.) I really like the flavors of this sausage and even use it in my chili!

This is a fun recipe I found and tweaked to my tastes for Sausage Meat Pies where you use won ton wrappers as the pastry - always great because they come ready made, stacked in nice neat squares or circles! I also used my own Pico di Gallo recipe here instead of salsa but you can revert back to using salsa if you like.

Serve these up with one of my fun Cucumber Martinis or my Gazpacho Martini and enjoy a great summer evening snack!

Home Made PESTO BREAD - Basil at it's Best!

I have an herb garden and I've planted a ton of my favorite herbs but for some reason my basil plants always grow like weeds. That's really nice if you're a big basil fan but, though I like a little basil too much of it and too often is not to my tastes. This does not apply to lemon basil which I use all the time - but the Genovese basil is something I use sparingly.

I give a lot away but there's still a ton left so I decided to make this Pesto Bread recipe - I don't like pesto as a pasta topping but I do like it as an accent on certain proteins and I love it on bread! The recipe for Pesto Bread is simple enough, toss in your basil, pine nuts, olive oil, some parmesan and garlic, mash it all up in a food processor and brush it on a baguette and toast it in a broiler and munch away!

BAKED APPLE TARRAGON CHICKEN BREASTS - 4 my tweeps!

Last night I planned on having Lemon Basil Chicken for dinner - it was so good last week I wanted it again. Unfortunately I didn't have any fresh lemons, I had lots of lemon basil as I grow my own, but no lemons? Can't do it without the lemons!

I did, however, have this gynormous jug of apple juice and I can only drink so many apple martinis. I keep looking at this huge thing in my fridge and wondering what to do with it - then I decided that apples might be a nice alternative to the lemons for my chicken. So I grabbed my scissors and clipped off a few twigs of Texas Tarragon, some onion chives and headed to the kitchen to experiment.

I have to tell you - this experiment turned out so great I twittered about it and a bunch of my tweeps asked for the recipe! So, here for you, my loyal reader, and for my new readers from Twitter:

BAKED APPLE TARRAGON CHICKEN BREASTS

4 Chicken Breasts, bone in & skin on!
1 Apple sliced as discs
2 cups apple juice
4 Sprigs of Texas Tarragon
Kosher Salt
Olive Oil
1 Bunch of Green Onions, chopped
Chives for Garnish (and the baked potato side!)

Preheat oven to 375.

RUB FOR CHICKEN BREASTS:
Clean, dry and chop the tarragon. Pour about 1/4 cup of olive oil into a small bowl, add a teaspoon of kosher salt, about 1 tablespoon of apple juice, a handful of the chopped onions and the tarragon then muddle this together.

Lift the skin of the chicken and rub this mixture all over the breast. Place 2 or 3 slices of the apple on top of this then pull the skin back over. Rub more of the mixture on the skin.

Bake in the oven for 40 minutes - 50 minutes depending on the size of your breasts.

THE SAUCE:
In a sauce pan pour in a few tablespoons of olive oil and saute the rest of the green onions for a few minutes, add the tarragon, the remaining apple juice, salt and a few slices of apple. Reduce this on a medium heat until the juice has reduced down and the sauce is just starting to caramelize (this is tricky, if you walk away to Twitter it can burn at this point!). The sauce will have thickened to a nice consistency and be a medium brown. Strain out the onions, tarragon and apple slices.

Start the sauce about 30 - 40 minutes into the baking time of the chicken and it should be ready just in time to serve over your crispy, juicy chicken breasts! Remember - do not walk away just for a "few tweets" - you know how it sucks you in!

Pour the sauce over the chicken, sprinkle on a few chives and serve! BTW, my Apple Martini recipe is great as a cocktail to enjoy while the chicken is baking - serve the Apple Martini with some lovely smoked Gouda and crackers. Or serve my Caramel Apple Martini with cheese as a dessert course!

Serve up with some Basmati rice, a baked potato or some other side and enjoy those juicy, sweet chicken boobies - ok, now you can go back and Twitter!

Mamma Mia Nachos - Pita Pizza Nachos in honor of Abba

These pita nachos are a fun way to make use of extra pita bread you might have - additionally they are great appetizers and snacks for drop in guests. I call them Mamma Mia nachos because they're really pizza and I also loved the movie Mamma Mia and finally found a way to plug it here on my food blog, lol.

Enjoy these Mamma Mia nacho pizzas while you watch this video which is the truly fun and wonderful end scene to the movie Mamma Mia - I hope you get as big a kick out of it as I always do when I watch it and see those outfits:

Pastry Wrapped Baked Cheese Appetizer

This recipe always reminds me of Beef Wellington but with cheese instead of beef or a cheese. It also makes me think of Baked Alaska. It's a nice way to serve a warm cheese appetizer that's also pretty easy to make.

You simply wrap a block of cream cheese that's been topped with other shredded cheese and some herbs in a little pastry and bake. I use pie dough sheets but you can also use puff pasty or Phillo dough if you prefer and follow their instructions for baking.

Try some experimentation with the different cheese toppings and the herbs and make this one your own. Enjoy!
