I love oven roasted potatoes and this is my recipe for making them. These are the perfect side to go with the Oven Roasted Tri Tip Recipe I posted last Friday - your oven is already on and you can make both dishes at once! Here's a fun little tip for adding veggies - cut them larger than the potatoes and roast them along side in the same dish! I did that with some purple cauliflower the last time and they turned out great, plus the color of the cauliflower added some extra visual punch.
