The 2010 Pillsbury Bake Off Finalists - 100 Recipes!

The 2010 Pillsbury Bake-Off Finalist Recipes have been chosen and there are some really great ones amongst the 100 offerings! Right off the bat I scanned for Tiny Foods and there's quite a few interesting and delicious sounding appetizer recipes I want to try: Caprese Pesto Margherita Stackers, Salmon Pecan-Crusted Tartlets, Pepperoni-Pesto Popovers amongst them. Not to mention a few of the desserts like Java-Glazed Cinnamon Rolls or Pear-Havarti Crêpe Squares.

With 100 original recipes I could be testing these out for a long time so I'm going to watch for the winners to be announced on April 12th to see what the judges think. In the meantime I'm going to try out a few of the most interesting ones that appeal to my personal tastes.

One of my favorite desserts is this Chocolate Creme Brulee for Valentine's Day. Brulee is French for "burnt cream" by the way so if you want to get really "showy" torch the sugar right at the table! Enjoy!

VALENTINE DAY DESSERTS - Mini Chocolate Lava Cakes

Another chocolate dessert - and this time it's the king of chocolate desserts - Chocolate Lava Cakes in mini size. These little cakes are rich, gooey little gateaus that burst with flowing chocolate on the first spoonful. Yes, I said spoonful - a fork can't scoop up all that chocolate love that cascades out.

If you can find little heart shaped baking dishes it really gives these little cakes a good love vibe! Dusting the powdered sugar through a heart themed doiley can also add some Valentine fun, but you could serve these on a plain old paper plate and they'd still rock your chocolate craving.

VALENTINE'S DAY DESSERTS - Chocolate Raspberry Heart Tarts

These Chocolate Raspberry Heart Tarts take a little bit of work but they're easy to do and they'll really impress when you set them down in front of your Valentine's dinner guests.

The heart shape is a lovely way to end a Valentine meal but if you don't have the heart shaped valentine cutters go ahead and use another shape and bring the heart shape in with a heart shaped chocolate candy on top. You can also use glasses, shot glasses, cleaned cans or even a knife to cut your shapes out of the pastry, be sure to dip whatever you're cutting with into a little flour to keep it from sticking to the dough.

VALENTINE'S DAY MENU - Oven Roasted Red Potatoes

These Roasted Red Potatoes are the starch element of my Valentine's Day Menu. I love roasted potatoes with garlic and rosemary and they are so easy and delicious to make. I'll be pairing these with a lovely oven-roasted tri-tip for my Valentine's Menu which I'll be posting Monday BUT they go great with chicken, pork and even a lovely fish recipe.

Feel free to substitute some fun fingerling potatoes or whatever variety you like though you may have to adjust your roasting time. The fork tender tip is the best way to check to see if your potatoes are ready to plate.

VALENTINE'S DAY MENU - Mini Seafood Casserole Starter

Here is the starter course for my Valentine's Dinner Menu - Mini Seafood Casseroles. The appetizers and breadsticks (and even one dessert) have already been posted - just scoll down to previous posts.

This is a delicious seafood appetizer that anyone can whip up in just a few minutes. You can used canned crab and shrimp but it's much better with fresh. Please, Please, Please don't use that imitation crab, that's just whitefish dyed to look like crab - seriously does anyone like that stuff?

It's really cute if you can get ahold of some beautiful little actual seashells to use as your baking dishes. Just make sure to thoroughly clean them and run them through the dishwasher to sanitize them before use.

I love cucumbers (hey, I've even created a cucumber martini!) and dill, combine those two flavors with cream cheese and bread and I will happily munch away for hours.

These Dill Cucumber Crostini Hearts with cute little red pepper heart garnishes are easy to make, fun to look at and eat and are a perfect starter for any Valentine's Day dinner or celebration!

CHOCOLATE COVERED STRAWBERRIES - A Valentine's Day Dessert Recipe

Today I posted the Chocolate Strawberry Valen-Tini at The Martini Diva which calls for a chocolate covered strawberry as the garnish. I have posted the recipe for making Chocolate Covered Strawberries before but somehow I never made the recipe card!

Shame on me BUT how appropriate to create it and post it for my Valentine's Day Recipes, right? Anyhoo, here it is in all it's glory - the simplest recipe in the world for one of the sexiest desserts you can ever serve!

If you don't have a double boiler make your own with a regular sauce pan and a stainless steel mixing bowl or a Pyrex mixing bowl large enough to sit ATOP the sauce pan. Fill the saucepan with water, just as you would with a double boiler, then place your chocolate pieces in the mixing bowl and melt away!
