First, I apologize for the bad pun in the title but it gets the keyword "latke" in there twice and it really is true - potato latkes are inexpensive tapas to serve to your guests and they taste great.
I'm Irish so I love potatoes in any form, though these are a Jewish comfort food classic you will see them in many cultures in one form or another - this is my mother's recipe and she was Czech! My mom used to call these Potato Patties because my sister Patty loved them so much! I loved them too but Potato Terris just did not work, lol.
By the way, I cheat - I buy already shredded potatoes (that you can buy in the refrigerator section near the eggs) and continue on with the recipe. I hate peeling and shredding potatoes.
These go great with my Apple Martini from The Martini Diva!
AND speaking of martinis, I've just finished five really fun Martini Art images for the PopArtDiva Boutique - Martini Art with the actual recipe on it! Get it on aprons, cups, coasters, tees and more here at the Martini Art Department of PopArtDiva Boutique!
Are My Recipe Cards Free to Download? Yes, please do - save them all, print them out and keep them or wrap them with a pretty ribbon and use as a gift! However, please do not use them on your blog, website or for any commercial purpose.
